Sexy Lentils?

Yes, another recipe.

Upon reading my comments from yesterday, I discovered a friend in the South Beach diet! Although I dislike the diet (my natural inclination is to include, not exclude, things in my life--particularly wine, cocktails, pasta and bread), it works and I definitly need help with the 50 odd pounds I am still carrying a year after giving birth. I have consequently become very creative in coming up with new and good things to make that stay within the boundaries of Phase 1 (which I have had to go back to since my very fat and happy Christmas).

So I promised a sexy lentil recipe.

Now some of you may think that I am hopelessly optimistic and romantical about lentils, but I am here to say that I am not. When I say sexy I mean exotic and foreign. This lentil salad tastes exotic and foreign (hence sexy) and like a drink that I love which is why I named it…

Mojito Lentil Salad

Lentils, however much you like, I usually have a cup of them, cooked (obviously)
Mix with a little olive oil and lemon and add feta cheese and chopped fresh mint.
Place over mixed greens or eat plain.
Tell me this does not taste fantastic and remind you of a mojito.
And it’s healthy and cheap!

They are the ordinary ones, mine are safeway brand and just say "lentils" on them, they look like...well the color of greenishyellowishputty uncooked and cook more mossy green I suppose. Let me know if you like the recipe. I sometimes add a little lemon vinaigrette to the greens (same as on the lentils) if the greens seem too dry. Let me know how it goes!

I love lentil's and I love mojitos so this will be a natural for me....however, I may take exception to the sexy part....too many lentils can some decidedly unsexy issues. I used to make this fantastic lentil stew and then the second day I would make it into lentil burgers....MMs co-workers started requesting I only serve that on Friday nights to spare them the unsexiness of it all.

Hi Jo
HELP! I need foodie advice!
I have vegetarians coming to Sunday lunch - an oxymoron surely?
The only thing I can think of is salmon en croute - I have made it before, it's an Aga recipe - but it's a bit dry - nothing similar in my 70 recipe books - I think it needs a sauce or stuffing.

The only other thing I can think of, is to cook the vegetarians?

Thanks so much for yet another delicious-sounding recipe. I'm definitely doing this.

(I haven't tried the steak recipe yet, but I will this weekend and will let you know what I think.)

I'm having troubles taking off baby weight, too. I've lately taken to wearing my husband's pajama bottoms, and sometimes wear them out, to drop off my boy at school, etc. I keep thinking that "What Not to Wear" will be after me, at some point, if I don't stop.

Suffice to say, I guess I need to purchase some new clothes in - gulp - one size up. Kicking and screaming, I might add. *sigh*

I definitly feel your pain. I finally went out and bought some new things a couple of months ago after a year of saying "I don't need to buy new clothes, I'll just wait to fit in my old ones." It has made a huge difference and mostly because it makes you feel good to accept where you are today, not sometime in the hazy future. I was definitly in a "What not to wear" phase of trying to SQUEEZE myself into my prebaby clothes...denial at its finest! I am trying to do the South Beach but am having a hard time sticking to diet...that's a whole other blog. Happy cooking with the steak...let me know how it goes!
